I’ve been looking for an easy recipe to try to make my own potato chips. I found another blogger who has a REALLY easy and fun recipe that takes a little time, but is worth the wait (and is actually pretty healthy).
You will need:
- 3-4 large potatoes (can add more for more chips)
- 2 Tbsp. lemon juice
- Olive or other vegetable oil
- Salt, pepper, or other seasonings
- Broiler pans/baking sheets
Preheat the oven to 375. Prepare a bowl of cold water and add the lemon juice.
Slice the potatoes as thin as you possibly can and place them into the bowl of water and lemon juice to soak for 30 minutes.
Remove the potatoes from the bowl and let them dry on a paper towel. They should be starting to curl slightly on the edges.
Add some olive oil (as much as needed to cover the slices) and seasoning (such as sea salt and pepper or parmesan) into a separate bowl and add the potato slices and mix until all the chips have a light coating.
Bake the slices on a cookie sheet until crisp. They don’t take long to bake so keep checking on them until they are as crisp as you would like.

Homemade chips never are the same. Use the driest, whitest potatoes you can find. Get the oil safely hot hot. Get as much moisture off the potato slices as possible.
Still something rustic on making these. Be European and toss on paprika with the salt..
